This week, we’re pulling something truly special from the archives of Alma Coffee Roasters: the Honduras Enchanted. There is something inherently soulful about a farm-to-cup story that starts at Finca Terrerito in Copán. Because Alma owns the vertical supply chain—from the 400ft deep water well to the final export—the quality control on this wet-washed lot is staggering. While many dark roasts hide defects behind the flame, Enchanted uses its roast profile to polish a high-quality Honduran seed. It’s a "clean" dark roast—an oxymoron to some, but a revelation to those who know how difficult it is to achieve a bold profile without a hint of carbon or unwanted astringency.
