This week we are heading to the legendary hills of Huila, Colombia, to experience a cup that defines "cleanliness and clarity." This offering comes from Faiber Bolaños, a third-generation producer who isn’t just a farmer—he’s a cupper and roaster for the Los Naranjos cooperative. That deep technical knowledge of the final cup really shines through in this lot from his farm, La Esperanza. While Faiber grows "trendy" varieties like Gesha, this 100% Caturra lot is a beautiful reminder of why we fell in love with specialty coffee in the first place. Grown at 1650 MASL and meticulously washed, it’s a textbook example of how a master producer can elevate a traditional variety into something truly transcendent.
On the bar, this coffee is all about elegance and "soft" complexity. It opens with a vibrant, crisp tangerine acidity that perfectly balances a dense, sugary backbone. The flavor profile is a gorgeous journey: you'll pick up on tart green grape and velvety apricot, underpinned by a deep, molasses-like brown sugar sweetness. As the cup hits room temperature, look for those hidden notes of tropical mango and a delicate floral aroma that lingers long after the sip. The body is beautifully round and weighted, providing a structured mouthfeel that carries the fruit notes across your palate without being overwhelming.
