Blossom — Honduras El Ocotal

Blossom — Honduras El Ocotal

Featured the week of February 9, 2026 — rated 9.9/10 by our tasting team.

Get ready to clear some space on your bar because this week’s feature is a total heavy hitter. We’re diving into a stunning Anaerobic Natural from El Ocotal in the Santa Barbara region of Honduras. This isn't just any lot; it’s a masterclass in the Parainema variety, grown at 1,500 meters by third-generation producer Yeltsin Sagastume. Thanks to the meticulous matchmaking of Ben Paz at San Vicente, we’ve secured a coffee that perfectly captures the magic of the El Dorado microclimate. Expect a profile that is absolutely vibrating with energy—the anaerobic fermentation has pushed the fruit notes into a wild, jammy territory while maintaining the structural integrity we love from high-altitude Honduran beans.

On the cupping table, this one stopped us in our tracks. The aromatics hit with an immediate punch of ripe strawberry and maraschino cherry, transitioning into a bright, citrusy orange acidity that keeps the cup incredibly lively. What really sets this lot apart is the mouthfeel; it’s got this lush, coating milk chocolate finish that provides a silky weight, balancing out that vibrant fruit. For the best experience, I’d recommend a flat-bottom dripper like a Kalita Wave to highlight that sweetness, or a V60 if you want to lean into the sparkling acidity. Keep your water temp around 208°F to really extract those complex sugars.
