Friends, I am beyond stoked to get this bag into your hands. This week, we’re venturing into the rugged Santa Barbara region of Honduras to visit the high-altitude slopes of La Sierra. Sitting at a staggering 1,600+ MASL, this 100% Pacas lot is a testament to what meticulous processing can achieve. On the cupping table, this coffee absolutely shimmered. It leads with a vibrant, sparkling acidity—think fresh pomegranate—that immediately evolves into a zesty lime citrus. But don't let the brightness fool you; it’s anchored by a deep, silky milk chocolate finish that creates a beautifully structured, complex profile. The mouthfeel is refined and tea-like, offering a clean, elegant transparency that allows the terroir to really sing.
To my fellow brewing nerds: because this coffee is so high-grown and dense, it loves a bit of extra energy. I recommend a V60 or Chemex to highlight that pomegranate-like malic acidity. Aim for a slightly coarser grind and a water temperature around 205°F to ensure you’re pulling out those nuanced floral and fruit notes without over-extracting the delicate body. This isn't just a morning cup; it’s a journey through the cloud forests of Honduras. We see our subscribers as family, and honestly, sharing a lot this special feels like inviting you over for a private cupping session.
