DeFer — Ethiopia Flower Show

DeFer — Ethiopia Flower Show

Featured the week of July 6, 2026 — rated 9.8/10 by our tasting team.

We are absolutely thrilled to drop this phenomenal seasonal feature into your hoppers: De Fer’s "Flower Show," a mind-blowing natural from Dumerso, Ethiopia. Cultivated at a staggering 1900–2200 MASL, this light roast perfectly captures everything we relentlessly chase in a fruit-forward single origin. The natural processing here is pristine—drying the coffee cherry whole around the seed to impart a massive depth of sweetness and wildly expressive aromatics without a hint of muddy ferment. It flawlessly hits those vibrant, delicate flavor milestones that we absolutely live for on the cupping table this week.

As soon as your bloom water hits the bed, you’re greeted with an intoxicating aromatic cloud of perfumed honeysuckle. In the cup, expect a brilliantly structured, sparkling acidity that translates into a vibrant burst of juicy peach and sweet raspberry. Because this roast is so delicate, the mouthfeel is wonderfully elegant and tea-like, tapering off into a crisp, slightly tannic Earl Grey finish that keeps your palate completely refreshed. To maximize cup clarity and squeeze every drop of complex fruit out of this bean, reach for a conical pour-over like a V60. Go for a 1:16.5 dose-to-yield ratio with your water right off the boil (205°F) to ensure you're fully extracting those tightly wound, high-elevation sugars. Happy brewing!
