Three Keys — Colombia Stardust

Featured the week of June 29, 2026 — rated 9.8/10 by our tasting team.

We are absolutely buzzing to drop a truly wild, punchy brew into your hoppers this week: Three Keys Coffee’s "Stardust." Themed after the iconic jazz standard, this light roast is an absolute masterpiece of modern coffee science and terroir. Sourced from the nutrient-rich volcanic soils of the El Vergel Estate on the slopes of El Ruiz in Tolima, Colombia, this lot is cultivated at a solid 1,450 MASL. What gets us incredibly excited is the meticulous processing of this Red and Yellow Caturra crop. The producers utilized a highly technical yeast-inoculated Mosto Anaerobic fermentation alongside a thermal shock phase. By introducing specific wild yeasts into oxygen-free tanks and meticulously controlling the pH, the yeast metabolized the cherry sugars into highly volatile terpenes, eventually moving to an intermittent drying schedule in climate-controlled silos to lock in specific vanillin molecules. It is an astonishing display of experimental processing mastery.
